Ingredients
1 stick of butter
1 medium yellow onion, finely chopped
3 medium potatos, cubed
3 tablespoons Old Bay Seasoning
1/8 teaspoon mustard seed
4 tablespoons flour
1 quart half & half
2 cups whole milk
1 pound Maryland backfin crab meat, cleaned and cartilage removed , keeping the lump crabmeat whole
Directions
In a large saucepan sauté butter, onion, Old Bay Seasoning and mustard seed over medium heat until the onion is tender.
Using a whisk, add the flour to make a roux.
Add the half & half, milk and potatoes. Stirring occasionally, cook the soup over medium heat for approximately 20 minutes, until potatoes are tender and sauce is thickened.
Gently fold in the crab meat and cook over medium heat for an additional 20 minutes, stirring occasionally.
Serve and enjoy!
Recipe Note
This hearty soup can be served with croutons or a sprinkle of Old Bay on top if you like it spicy.
